Try Cheddar, Pepper Jack or Jalapeno Hi-Temp Cheese. Comes in 2.5 lb. bags - the correct amount to use with a 25 lb. batch of Brats - which is what 1 bag of Leggs Bratwurst is mixed for also.
Ingredients: Salt, Dextrose, Pepper, Sage, Onion, Mace, and Celery. NO MSG!

- Mix bag with 25-lbs. of meat. You can use 25 lbs. of lean pork (boneless pork shoulder butts will work if you can't purchase 80/20 pork trim from a butcher shop). Or you can use 22 lbs. of lean pork and 3 lbs. of lean beef.
- Empty entire bag of seasoning into the 25 lbs. of meat and mix thoroughly (it works best if you cut the meat into small chunks first).
- Stir till seasoning is well mixed with the meat.
- Grind through normal grinder plate. Normally 1/4inch grinder plate
- Then stuff the sausage into Natural Hog Casings for links.
- Breakdown for less than a 25 lb. batch - 3 Tablespoons of seasoning per 5 lbs. of meat.

This AC Legg Bratwurst seasoning is as good as it gets. I made 25 lbs of Brat's and they are better than any I have purchased in the grocery store. They are also good cooked as a paddy!

Is this gluten free
As far as we can tell is is Gluten Free - but that is not stated specifically on the bag.
The ingredients in the AC Legg Bratwurst are: Salt, Dextrose, Pepper, Sage, Onion, Mace, and Celery.
As far as we have been able to find out none of those ingredients have gluten in them.
