A full-flavored Hot Italian sausage. Try your hot Italian sausage with fried peppers and onions on a sandwich roll or use it as a pizza topping. It's great in any number of ways.

  • This is ONE 8 oz. Bag ONLY - Seasons 25 pounds of Meat.
  • A full-flavored Italian sausage. 8 oz. bag. Contains the spices necessary to produce a HOT Italian sausage.
  • Legg's exclusive high-barrier, multi-wall packaging protects the seasoning's freshness and flavor for at least 12 months.

Salt, Spices (Including Fennel and Pepper), Paprika and Soybean Oil Added as a Flow Conditioner. NO MSG!  Contains the spices necessary to produce a HOT Italian sausage.

  • Mix bag with 25-lbs. of meat. You can use 25 lbs. of lean pork (boneless pork shoulder butts will work if you can't purchase 80/20 pork trim from a butcher shop). Or you can use 22 lbs. of lean pork and 3 lbs. of lean beef.
  • Empty entire bag of Hot Italian Seasoning on to your 25 lbs. of Meat.
  • It works best if you cut the meat into small chunks first.
  • Stir till seasoning is well mixed with the meat.
  • Grind through normal grinder plate.  Normally 1/4 inch or 3/16 inch grinder plate.
  • Then stuff the sausage into Natural Hog Casings for links.
  • Or you can package the sausage in 1 lb. bulk Freezer Bags
  • Breakdown for less than a 25 lb. batch: 3.12 oz. of Seasoning per 1 lb. of meat. Or 1 oz. of Seasoning for .32 lbs. of meat.  2 Tablespoons = 1 oz.

I've used this for years

I've used this for years. I mix with my Venison and wrap with cellophane and vacuum. Meat is still good after two years.
This is the BEST seasoning that I have found for making bulk sausage. Not too hot and very nicely spiced!

Purchased leggs hot Italian sausage last week. Reciebed it within 3 buisness days. Some friends and i made 2 different brands of hot Italian.   • Is it gluten free

    The ingredients in the AC Legg Hot Italian Sausage Seasoning are:  Salt, Spices (Including Fennel and Pepper), Paprika and Soybean Oil Added as a Flow Conditioner. No MSG.  As far as I know none of these ingredients contain gluten but the packaging does not say "Gluten Free".  None of the AC Legg Seasonings or Witts Seasonings are labeled "Gluten Free".

  • How much hot Italian seasoning for 3 lb

    1 oz. of AC Legg Hot Italian Seasoning for every 3 lbs. of meat.
